A for appellation
Chablis owns four appellation wines (AOC: french top quality wine):

  • “Petit Chablis” (“vibrant” and "Pas si Petit”) is not in large quantity at La Chablisienne.
  • 4 named vineyards of the Appellation wine “Chablis” : « La Pierrelée », «Le Finage», «La Sereine», «Les Vénérables - Vieilles Vignes».
  • Eleven named vineyards of Chablis Premiers Crus :«L’Homme Mort», «Fourchaume», «Vaulorent», «Montée de Tonnerre», «Mont de Milieu», «Fourneaux», «Montmains», «Vaillons», «Les Lys», «Côte de Léchet» et «Beauroy».
  • 6 named vineyard of Grands Crus : «Bougros», «Les Preuses», «Vaudésir», «Les Clos», «Blanchot», «Grenouilles».

     

B for Blanchot or Bougros
Blanchot and Bougros are two of the seven Grands Crus of Chablis. Matured 14 months on fine lees, these wines stemming from little plots of old wines are both racy and bright. You’d rather keep them in your cellar for a while.

C for Chablis
The producers of Chablis are fighting to keep the Chablis name associated to its original terroir. La Chablisienne shows solidarity to this clarification in order to remove the false or counterfeited Chablis, which damage our work and the reputation of the Chablis wines.

C for Chardonnay
Only one grape variety is grown in Chablis : Chardonnay. It ‘translates’ the kimmeridgian soil in a special way, with less aromas of walnut than in Meursault or Corton but with more restraint. Balanced and supple, its often nervous final touch can have mineral notes of a great fineness.

C for Château Grenouilles

F for Fourchaume
Fourchaume with about 115 ha, became the widest of the premiers Crus. La Chablisienne owns two named vineyards of Fourchaume: « L'Homme Mort” and “Vaulorent”.

G for Grenouilles
…and for Château Grenouilles, the unique “Château” of the whole Chablis vineyard! Theses 17.2977 acres of plots belonging to La Chablisienne, offer wonderful vintages. From now on, our two Grands Crus of Grenouilles will be named: « Château Grenouilles”, a great wine of Chablis and “Le fief de Grenouilles”, second wine.

G for gastronomy
Our wines accompany very well river fish (trout, perch, pikeperch…), white meat (poultry, veal) and cheese (Epoisses). A great Chablis also suit perfectly to lobster, crayfish, not to mention scallops, black truffle…

M for mineral

P for Les Preuses
La Chablisienne exploits 9.8844 acresof the climat « les Preuses ». Its personality comes from its 30 years-old wines located on the right bank of the river Serein in magical plots overlooking Bougros. With a harmony of fineness, mineral and fruity aromas, long persistence in mouth, this wine can be kept a few years to reveal its richness.

Minerality is the main feature of the Chablis wines and particularly of our wines. Passionate people talk about a terroir of white stone; This mineral touch combines olfactory sensations (aromas of gun-flint, flint, iodine, chalk, oysters, seashells...), gustatory sensations (freshness) and texture (crystal-clear wine); Inside the Chablis vineyard, there are many different expressions of minerality...
